So TW is a bit different from Leap in the handling of updates. What I’ve read is to use zypper at the command-line. Leap used to flag “security updates” and the need to reboot after some of those (which to me means that one would be a more necessary update). I am not sure, but I think I’d rather only do zypper dup on more rare occasion if the system is running OK, but it seems reasonable to do security updates more often. What’s the best way to handle this in TW?

My Tumbleweed practice is to run
zypper dup
once per week, whether it needs it or not. (Hint: it needs it).
Security updates are not separately flagged in TW. But many of the updates are security-related. Updating once per week seems like a reasonable compromise. If you hear of an important security issue, you might update an extra time occasionally.
I agree with Neil. Tumbleweed is a rolling release, so the recommended approach is to keep up with snapshots by running zypper dup frequently, and each snapshot is tested and released as a whole.
If you find a weekly update cadence is more frequent than you’d like, Slowroll is also worth considering. It follows the same rolling-release model as Tumbleweed but with a slightly slower snapshot cadence, making it a good middle ground between Tumbleweed and Leap.

Oh, ya, I recall that now… There are related packages… 
FYI: Rolling in the case of TW does not mean the rolling like other distros do, i.e. on a package level. In TW updates are pushed to Factory, they go into openQA for testing and what passes testing ends up in the new TW snapshot, which can, every time, be downloaded as an install iso.
So, every snapshot is basically a new distro release. As much as Leap release.
If you want less headaches and less updates, try Slowroll: It’s also a rolling release, but - as the name implies - it’s rolling slower, and you are very rarely confronted with brand new problems. Usually somebody else discovered the problems already, and there is already a fix available.
Fun fact: I just read on a local news site about “walking football” for the first time; a very similar concept.
