You can enable/disable PulseAudio in YaST->Hardware->Audio, click on “Other” at the bottom and choose “PulseAudio Configuration”.
Note that you need to logout and in again for full effect.

There should not be a need to delete pulseaudio at all, just turn it off.
It should be fine to uninstall it too (and you shouldn’t have a “hole lot of trouble”), but you need to keep libpulse.
And again, you’d need to logout/in or reboot afterwards, otherwise apps will still try to use PA (and fail at that).
Also, did you actually install and run kmix?
The standard volume applet in the system tray does not work without pulseaudio as it is just a PA frontend.
