I’m a developer and I’ve long used openSUSE Leap as a free replacement of SLES for testing server applications. Now when Leap 15 is EOL and SLES 15 is generally supported until 2031 what should I use to mimic SLES? Stick to the latest Leap available (15.6) for the rest of the time?
There is no openSUSE Leap 15.7, so not really sure what your going to try and support as there will likely be packages updates that would not even mirror Leap 15.6 <=> SLES 15 SP7?
Get a SLES 15 SP7 subscription and carry on?

There are SLES 15 Base Container Images here
AIUI those are free for testing and might be enough for your use case?
Quoting from Container-guide:
SUSE Linux BCIs are fully compatible with SLES, but they do not require a subscription to run and distribute them.
