I’m going to upgrade from 15.6 to 16.0, but I could also upgrade to slowroll, which are the main differences between them?

Leap is LTS which means it doesn’t update unless to fix a bug or security patch and it’s backported to the current version it’s more stable but outdated in compression to slowroll which is rolling means it update constantly and not fixed on certain versions it’s less stable than leap but you get modern packages
