Please boot installation or rescue media if necessary to provide here output from efibootmgr -v > somefile.txt and fdisk -l >> somefile.txt, plus content of /etc/fstab by using copy and paste of somefile.txt and /etc/fstab content.
This is a bit of a long shot , but have you tried booting with the boot overwrite menu (think it’s called) by using the F12 key on you keyboard. It may be not available on your system though.
@keescase IMO it’s no longshot, but more likely the exact need. It’s the BBS (hot)key (BIOS BOOT [Selection,Service]). The only question is which key is it. If it’s a Dell, it’s F12, but others that use F2 for BIOS setup can be different. Try picking one from this list:

Well it can be a bug in the BIOS , if you reset the BIOS it starts with the default settings. If you don’t have the latest BIOS there may be a update that can solve
the bug. But not knowing your hardware it is just a guess.
