Why is Postfix included and configured to start at boot time by default? Is this only required for system mail and if one wouldn’t enable system mail is it ok to remove Postfix?

It delivers your local system mail. By defaul it listens on localhost only, so no security implications here.
Leave it enabled.

As I’ve been told, also to keep system messages reaching you that might get mailed to you (apps running localy).
