I got a hold of an xpdf tarball, but don’t know where to unpack it. Where should things like xpdf, ghostview, gimp, etc. go in the root directory? Is it /usr/share or /usr/local/share or something similar?

As ab says, you would be better using YaST to install programs. There are recommendations for the location of all Linux programs but occasionally a distribution will do things slightly differently.
For example, OpenSUSE uses a different organisation of KDE4 to allow people to have both KDE3 and KDE4 installed alongside each other.
By using YaST you can be certain that all programs have been installed in the folders where other programs expect to find them.
