Where are the associations of Openoffice stored

Hi,

i got the following problem. (OS11.1 Gnome)

I’ve got a excel-file, which should be opened with OpenOffice.
I know with right-click and settings i can tell the system which application to launch when i double click the icon.

My question: is there another way to tell the system which application is associated to which extension?

Normally if you just click a file as if the launch, OO will just open it correctly. But you can right click a file and go to properties to set program priority.
And probably via the system settings - file associations
