You can certainly use GPT partition tables now… been that way
for quite some time. I generally advice against it… just
because not all hardware can boot from it… and there are
more than sufficient workarounds for when you just have to have
really large partitions… but no matter.
Traditional setups will want to use GPT… and AFAIK, it
works just fine (if your hardware can handle booting from it).
I’m pretty sure it’s not an issue with grub now.
Somebody else feel free to correct me.
My “better” solution is to use LVM where possible.
