If in install OpenSuse 12.1 RC will I be able to upgrade to final when it’s released or should I just wait for the final version?

yes - especially if it is from rc2 as it unlikely that there will be many changes (just bug fixes) until 12.1 is released in 11 days. Although for the sake of 11 days it might be worth hanging on until then.
