Update. Looks like this was another one of those Linux problems that fixed itself. After doing a zypper dup today and going up to 7.0.5, the issue got fixed. Logging into the GDM screen now correctly dumps me into Gnome instead of IceWM. The key thing is the little gear icon now back on the GDM login screen. I’m not sure, but I think Gnome got an update that fixed it.
Most likely your previous upgrade was not completed for whatever reason (possibly an X11 restart) and the next one fixed also what was not upgraded during the broken one.

Wouldn’t that give errors during zypper dup? I don’t remember seeing errors in my recent updates. If an upgrade doesn’t complete, where do the errors appear?
Check /var/log/zypp/history (or one of the former .xz compressed files if the relevant dup is archived already)
