just wondering… i know that Suse linux has the haredware capabilites for a tablet PC… but does any one know what kind of application options there are for linux on a tablet??
It depends on what you need, really 
I think, that 2 most useful apps for you will be:

Cellwriter (handwriting input method for any Unicode characters. Good for alphabetic languages (English, German, French, Russian etc). Is useless for Asian languages (Chinese, Japanese, Korean etc))
