Hey,
When I first installed openSUSE Leap 42.1 I had to install video codecs to view videos I recorded with my smartphone on my computer.
Now It asks me to update the video codecs everyday.
How do I stop It from updating?

zypper lr -uP
- What packages does it want to update daily? Is it always the same one or a different one every time?
Get the same in13.2. OK not every day but several time a week it seems. I set things to only check once a week. Leap uses a new download program so I don’t know where or if that can be set. Note it still check ever login.
It appears that what happens is a small change is done to one or two files but the whole stack needs to be updated to match version numbers.
You can always turn off the auto check stuff and manually check periodically. a zypper up once or week or so will keep you updated.

FFmeg, VLC, and the libvlc.
Not sure which one the video uses for codec that’s why there are different ones.

You should remove or disable 5 and 6 there are not needed once you do the initial install
If you switched all codecs to Packman (which you should have) that is where the updates come from. And codecs include audio as well as video codecs.
I solved that by turning off the update notifier (in tray settings for Plasma 5).
What happens is that when one program changes, a lot of other programs are recompiled (because of dependencies) even though the program didn’t change. And that makes it look like an update.
I use “zypper up” to manually update. I do this just before any planned reboot.
you want to disable packman updates?
you can disable the packman repo, or disable auto updates from the update widget, the only reason to do so is if you have limited bandwidth as this isn’t windows and a codec update does not require a reboot I don’t see the reason of doing so, yes packman updates a few times a week but I always thought that was a good thing.
some time a log out log back in is required if you want to run with the new installed code but that depends on what was updated and what was/is running. In any case you never ever are required to reboot or logout immediately like in Windows. Do so at a convenient time.
