Since mathematia is a commercial program I would first ask their support
if I were you.
Otherwise start mathematica from a terminal and look if there are useful
error messages (like about a missing library or so) which can help to
identify what the problem is.

PC: oS 11.4 (dual boot 12.1) 64 bit | Intel Core i7-2600@3.40GHz | KDE
4.6.0 | GeForce GT 420 | 16GB Ram
Eee PC 1201n: oS 11.4 64 bit | Intel Atom 330@1.60GHz | KDE 4.7.3 |
nVidia ION | 3GB Ram

I’ll give this my guess:
As Mathematica is installed, by default, into “/usr/local/Wolfram/Mathemtaice/8.0” with the main scripts for calling copied to /usr/local/bin I guess the latter were damaged/overwritten/whatsoever during the update.

Try to call Mathematica directly from /usr/local/Wolfram/Mathematica/8.0/Executables.
If this does not work you’ll still see the error messages.

You know that this has a likelihood near to or exactly equal to zero,
nothing under /usr/local will ever be touched by any update or upgrade
process of the system or its software.
It is just much more likely that some shared library is missing which
was used before or that a newer version incompatible with mathematica is
installed now on the system and one has to find out which as I said before.
