is it possible to install opensuse without java?
yes
Which software depends on java?
java apps (jar files), libreoffice needs java but will work without it (some features will be unavailable), Firefox won’t load java applets

I don’t use java even tho I have it installed, I’ve disabled java in Firefox and I don’t use any jar applications, even tho I don’t have 1st hand experience (I have openjdk installed) I’m 99% sure most things will work without java
Installing openSUSE in “server” (text only) mode does not install any Java by default, and likely the “Minimal X” (no big Desktop) also.
