Yes. Connect all of those machines to a switch. Just in case: If you have one PC with two network cards, then you connect the second NIC to your modem/router and set it up as a masquerading firewall. Then everyone has internet access as well.
For the LAN select a network in the 192.168.x.y range. Ask again for any further questions.
For remote mounting of filesystems use NFS.
For remote printing, configure wth CUPS.
Scanner I am not sure that this can be used remote.

But you have to be next to the scanner anyway to feed it with documents. Then you can copy the scans to any box within the LAN.
Or put them directly on a NFS mounted home directory. Yes, my idea.
But the OP asked for it and I can imagine environments (office like) where more people can touch the scanner, but another one is siting at the PC where it is connected to. For printing this is of course no problem.
