Default vs Desktop kernel

What is the basic difference between the default and desktop kernels and would I
in general usage ( browsing and the odd bit of word processing ) notice any difference?

The reason I ask is that my old machine panics on startup with the desktop kernel
but works fine with the default.

kernel-desktop has been developed with the modern desktop computer in mind.

If kernel-default works for you, use it.
If you have more than 3GB RAM you will not see more than 3GB.
You could try kernel-pae to work around that (kernel-desktop would be OK with the RAM as it also does PAE)
