Every time that I turn the pc on I have to adjust the clock!
I adjusted it this morning and now it displays 17:07 but it’s 18:25.
No matter if I set the clock to local or Europe/Rome
What should I do?

It sounds like a hardware problem if the hardware clock is not maintaining time.
Make sure your hardware clock adds up, so set you local time and set,
hwclock --systohc followed this page
