Try looking in Properties>Driver settings

If you save the setting, it becomes the default. Otherwise it holds for the rest of the session.

There is only Color Model: RGB but I cant change to BW. So what to do?

I have only come across this once before with a Lexmark but there are lots of posts on Google saying that users of other distributions have had the same problem though one suggests that Canon Europe may have created some drivers. I suggest you try Googling for help in this case.

At the moment you can’t print B&W on Linux drivers, but you can always change picture, pdf or any other file you want to print to B&W before printing. It’s the only way for now :\
