I can not get Alacarte to accept changes I make by unchecking apps that I do not want listed. I can however delete apps from the list, but that is not the best solution as I might want to easily add those apps back.
Am I missing something? Is there a way to get it to work like it did in 12.1?
Could someone at least acknowledge if Alacarte works for them or not?
Hello and welcome. I can confirm. If I uncheck gedit from alacarte it still shows up in the gnome shell even if I restart the shell. I am not sure how to fix.

OK, any of the items you de-select will duplicate in;
~/.local/share/applications
For example if you uncheck gedit in alacarte, then look in the above
directory, there will be a gedit.desktop entry. You then need to edit
and add;
NoDisplay=true
Then it will not be in that users Application list.
