I assume that 12.1 final will launch with Gnome-shell 3.2?
Would I also be correct in assuming that the coming beta will be running a more updated 3.1.9x gnome-shell?

Sorry I am not a gnome user but in factory they now have gnome version 3.1.90 (which in kde speak is a beta version for 3.2) - so I would suggest that the answer to your question is ‘yes’.
