The "relay server" is often referred to as an SMTP Smarthost.

Am assuming that you're saying that your Hosting Provider where your Authorized records are configured is also providing a mail forwarding service (SMTP Smarthost).

When you setup your mailserver in YAST, on the Window "Outgoing Mail" you will need to enter the SMTP Smarthost name and configure the method of authentication/security (No/Use/Enforce). Nowadays, TLS is used... or the server would be used by just about anybody.

Forwarding root's mail depends on your machine configuration. By default, on an openSUSE root mail is sent to the mailbox of the first User created during install. If you're talking about your Domain's Admin mail address, that's a completely different issue (hope you're not asking about that).
