Default Default the Additional Information in Dolphin

How can I make Dolphin display the "Additional Information" for all folders that I open? Right now, I have to select View - Additional Information - Size for every folder I open to see the number of files in each folder and/or the file size for each file.

I like KDE 4, but I really miss Nautilus

    Open preferences - General
behaviour - Use Common View Properties for all Folders
    apply

Now go to View and check the settings you want there

    Ah - I see! Thanks.

Now, not to be too "GNOME-y", but is there a way I can set those preferences by View type? In Nautilus, I can still have it remember the view type + sort order for each distinct folder (Icons, Details, etc.), but each view type has the same setting (as per my original question).

Isn't that just the opposite to the option I just gave you, which was: "Use Common View Properties for all Folders"

You just asked for: "remember the view type + sort order for each distinct folder"
It is a far too Gnomish question for me. I have always found Gnome's file sort "Icky"

I suspect the OP wants the equivalent to the Microsoft (sorry :-) )
option to set individual folder preferences, but initialise them with
"make them all look like this one". I'm still on KDE3.5 and tend to view
    every folder the same anyway.

No, but I knew that was going to be confusing: in Nautilus, the settings are applied by view type. So, the fact that I want to look at /folder1 in Icon view and /folder2 in Details view "stick" with the folder after I close Nautilus, but which properties are shown in Details or Icon view are set globally.

There is nothing stopping you from using nautilus in KDE4. :-)

If you rightclick on a folder in dolphin and then click on the wrench icon,
you can set what is used to open folders.
Select nautilus (after you installed it) to be the default tool for folders.
Maybe it's not in the list, but you can add it.
