I want to give this whole 3D desktop thing a go but I don't know whether to go down the Berly or Compiz route. I want stability and I don't want problems when it comes to playing games that require OpenGL.

My Specs:

nVidia 7600GT
AMD 4600 x2 EE
SuSE 10.2 86_64

Any advice will be gratefully received.

If your main goal is to play 3D games, then I'd recommend not running a 3D desktop. IMHO of the two, Beryl should give you the least amount of problems there.

I forgot to ask, should I run Beryl from Xorg's AIXGL or should I install XGL?

Try xgl first, it is the recommended way to run Beryl from their developers.
