Setting File Encoding?

I have just installed an OpenSuse 10 as a LAMP server. I need it to test a website which I'm doing modifications for. However, when transferring the files from Windows XP to Linux all of the special characters 'æøå' and foreign characters including the next character disappeared.. => echo("Test æøå"); became : echo ("Test ?); leaving the site to fail.

Since we are talking about around 158 files it is NOT a great thing to edit these by hand..

Any ideas?
