Easy..

Yast->Printer->Pick Already installed printer (change) ->Edit->
PrinterFilterSettings-> PageSize (set to US Letter)

silly me, newb had no idea what PrinterFilterSettings meant

CUPS is famously painful to configure. Look up the rant by Eric
Raymond on
open source GUI's and CUPS to see what I mean.
