I only ever got 11.1 to work on USB by installing the live image using unetbootin, then deleting the config.isoclient file in the root of the USB, and copying config.gnome.isoclient or config.kde.isoclient (depending on which LiveCD iso it was) and renaming the copy config.isoclient.
